Halloween Spaghetti And Meat Balls Recipe

Last weekend, I attended my mother-in-law's 3rd Annual Chili Bowl Competition. I recall years ago when she just came up with the idea, an idea to bring people and family together for an event other than football. Usually the week after the Superbowl, she has hosted an afternoon devoted to chili. The first year of the chili bowl, I proudly took home a blue ribbon for the number one chili voted upon by a panel of judges. The following year, my chili verde didn't quite make the cut with so many good traditional chili recipes ahead of mine. For the 3rd Chili Bowl, I moved up in the ranks as a judge for this event along with a much more qualified food editor, a cook, and a fellow foodie like myself.

Try chicken meatballs one night instead of ground slow cooker italian meatballs. The chicken is better for you than the beef and it provides a light dinner. The chicken meatballs can be baked instead of fried which will eliminate the fatty oils.

Bake the potato until done, 30 - 45 minutes in a preheated 400 degrees F oven. I usually go ahead and bake my potato in the microwave to make it faster. Peel and mash the potato. Do not add any butter or spices to the potato. Place the plain, mashed potato, pork meatballs, onion, spices and water in a large frying pan and simmer until very thick, for about one hour. You do not need to brown the pork or precook it as the simmering will cook it through.
